Whoever thought of piling dinner ingredients onto one baking pan to create a tasty, oven dinner truly was a genius. It's a great way to wow those sitting at your table while they have no idea how easy it is.

A spinoff of the one-pot meal, only take-out could be easier. Just place meat, fish or poultry on a sheet pan. Add vegetables, oil and spices; then quickly roast at high heat until everything is done. But don’t be fooled, easy does not mean boring. It means tasty.

For easy cleanup, I cover the sheet pan with nonstick aluminum foil. Any of the following recipes can be halved to make meals for a smaller crowd.

This first recipe is a delightful dinner served by my friend, Heather, at our weekly Friday night dinner club. It has a delicious Mediterranean flavor. 

Sheet-Pan Shrimp and Asparagus

Serves 4-6

1 ½ pound large shrimp, peeled and deveined

1 bunch fresh asparagus

4 tablespoons olive oil, divided us

2 cloves garlic, minced

1 small red onion, sliced

2 teaspoons 

2 teaspoons dried oregano 

2 teaspoons smoked paprika

Sea salt and black pepper to taste

1 lemon, juiced 

1 cup pitted black olive

1 cup Feta cheese

⅓ cup fresh cilantro or Italian parsley

Preheat oven to 450 degrees. Prepare sheet pan with nonstick aluminum foil or nonstick cooking spray.

Place shrimp in a large bowl. Toss with 2 tablespoons olive oil, minced garlic, salt, black pepper, oregano and lemon juice.

Wash and trim asparagus, lay flat on the sheet pan and sprinkle with 1 tablespoon olive oil. Lay shrimp on top of  the asparagus; top with sliced onions.

Bake 10 minutes on middle rack of the oven. Edges of the shrimp should be golden brown.

Remove sheet pan from oven. Top with Feta cheese and olives. Garnish with remaining olive oil and cilantro or Italian parsley and serve.

Roasted Ranch Pork Chops with Vegetables

Serves 6

6 boneless pork chops

2 pounds baby potatoes

1 pound carrots, cleaned and sliced  

3 tablespoons olive oil 

1-ounce package Ranch Dressing mix 

1 teaspoon smoked paprika  

1 teaspoon black pepper

1 tablespoon fresh Italian parsley, chopped

Preheat oven to 400 degrees. Prepare sheet pan with nonstick aluminum foil or nonstick cooking spray.

Place pork chops, potatoes and sliced carrots on the baking sheet. Drizzle with olive oil; toss well.

In a small bowl, mix Ranch Dressing mix, oregano, smoked paprika, black pepper and salt. Rub seasonings on pork chops and potatoes.

Place sheet pan in the oven; roast 25-30 minutes until pork chops register 145 degrees on an instant-read thermometer and potatoes and carrots are fork tender.

Remove from the oven, sprinkle with chopped Italian parsley and serve. 

Hash Brown-Egg Breakfast Bake

20-ounce package frozen hash brown potatoes, thawed

2 tablespoons unsalted butter, melted

1 tablespoon olive oil

¼ teaspoon dried thyme

¼ teaspoon dried basil

¼ teaspoon dried oregano

¼ teaspoon garlic powder

Kosher salt and freshly ground black pepper, to taste

1 cup shredded cheddar cheese

12 slices bacon, halved

6 large eggs

3 tablespoons freshly grated Parmesan

Preheat oven to 400 degrees. Prepare sheet pan with nonstick aluminum foil or nonstick cooking spray.

Place hash browns in a single layer on the prepared baking sheet. Stir in butter, olive oil, thyme, basil, oregano and garlic powder and gently toss to combine; season with salt and pepper, to taste. Sprinkle with cheddar cheese.

Bake until the edges begin to brown, about 20-25 minutes. Remove from the oven and create six wells in the hash browns. Add bacon slices over the hash browns. Gently crack the eggs into the wells while keeping the yolks intact. Sprinkle eggs with Parmesan cheese and season with salt and pepper to taste.

Return to oven and bake until egg whites are set and bacon is cooked, about 10-13 minutes

Remove from the oven and serve immediately.
